D. Price’s Blue Cheese Dressing
1 cup mayonnaise
½ cup crumbled blue cheese, divided
½ cup half and half
2 tablespoons sour cream
1 tablespoon freshly squeezed lemon juice
¼ teaspoon Worcestershire sauce
½ teaspoon kosher salt
Freshly ground black pepper
In a medium bowl, whisk together mayonnaise, ¼ cup blue cheese, half and half, sour cream, lemon juice, Worcestershire and salt until smooth. Gently stir in remaining ¼ cup blue cheese and season with pepper to taste. Use immediately or store in the refrigerator for up to 3 days.
Note: When it comes to selecting a blue cheese, there are a few different varieties, so choose one that best fits your taste. Roquefort is made from sheep's milk and is the strongest flavored. It is soft and crumbly. Stilton is made from cow's milk only and it is firm. Gorgonzola is made from cow's milk and has the mildest flavor and has a creamy character.
